Extraction is running too far
Bitterness and dryness often appear when too much is extracted from the coffee. A grind that is too fine can slow the shot and increase extraction, but shot time is only a clue — use taste and your normal recipe as the guide.
- The shot is noticeably slower than your normal recipe
- The finish is dry, harsh or astringent
- Bitterness increases as the shot runs longer
